Every Hillbilly has a twist or two they like to add to there sausage to give it a extra kick....including us. This recipe was crafted over the last 20 years of trying to make the PERFECT venison hot sausage and we finally figured it out so you don't have to!
One of our favorite traditions at Better Backstrap is turning a portion of our wild game meat into hot or sweet sausage. Our "home packs" are pre measured for 10lbs of meat are perfect for the home processor looking to make smaller batches.

John Dolan I tried this seasoning for the first time. I did a 5:1 ratio deer meat to pork fat through the grinder 2x. Seasoned 12 lbs total including fat and it turned out great. Perfect breakfast sausage or something to substitute for chili

Joe Locke We got one of these and one od the sweet Italian to try against the seasoning we typically use. We used a 60/40 wild game to pork ratio which is what my family likes. Great on the smoker or in the crockpot with some red sauce for game day!
